  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 6 slices cooked chicken, crumbled
  • 2 jalapeño peppers, seeded and finely chopped
  • 1 green onion, finely chopped
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 eggroll wrappers
  • Vegetable oil for frying

Instructions

  1. In a mixing bowl, combine cream cheese, cheddar cheese, crumbled chicken, jalapeños, green onion, garlic powder, salt, and pepper until well mixed.
  2. Lay an eggroll wrapper on a clean surface and place about 2 tablespoons of filling diagonally at the center. Fold the bottom corner over the filling, fold in the sides towards the center, then roll tightly to seal.
  3. Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
  4. Fry eggrolls seam side down in batches for about 3-4 minutes until golden brown and crispy.
  5. Remove from oil and drain on paper towels before serving hot with your favorite dipping sauces.
