  • 6 Tablespoons (85 g) unsalted butter
  • ½ cup (100 g) granulated sugar
  • 4 ½5 cups (540600 g) all-purpose flour (spooned and leveled)
  • 2 ¼ teaspoons instant yeast
  • 1½ teaspoons salt
  • ½ cup mashed banana (about 1 large banana)
  • 4 Tablespoons (1/2 stick, 57 g) unsalted butter (very soft)
  • ½ cup (107 g) packed light brown sugar
  • 1 tablespoon cinnamon
  • 2 large bananas (thinly sliced)
  • ¼ cup (60 ml) heavy cream (slightly warmed for pouring on rolls before baking)
  • 4 ounces cream cheese (softened to room temperature)
  • 4 tablespoons (57 g) unsalted butter (softened)
  • 1 ½ cups (170 g) powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Heat milk until lukewarm and stir in melted butter.
  2. Combine sugar, yeast, salt, mashed bananas, and 2 cups of flour in a mixing bowl.
  3. Add the milk mixture and gradually incorporate more flour until a soft dough forms.
  4. Knead on a floured surface for 5–7 minutes. Let rise in a greased bowl covered with plastic wrap for 1 hour.
  5. Prepare the filling by mixing softened butter, brown sugar, and cinnamon.
  6. Roll out dough into a rectangle and spread filling evenly; top with sliced bananas.
  7. Roll tightly into a log shape and slice into 12 equal pieces.
  8. Place rolls in a greased baking dish; let rise for another 30 minutes.
  9. Preheat oven to 350°F (175°C) and pour warmed heavy cream over rolls before baking.
  10. Bake for 25–35 minutes until golden brown. Cool slightly before frosting with cream cheese mixture.
