  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 12 oz linguine pasta
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the linguine in a large pot of salted boiling water until al dente, about 9-10 minutes. Reserve ½ cup of pasta water, then drain and set aside.
  2. In a skillet over medium-high heat, heat olive oil and butter. Add chicken chunks seasoned with Cajun spices and sear for about 8-10 minutes until golden brown.
  3. Remove chicken and prepare the Alfredo sauce in the same skillet by melting butter and sautéing minced garlic before adding cream and milk.
  4. Stir in cheeses until melted; mix with linguine until fully coated.
  5. Serve the cheesy linguine topped with Cajun chicken bites and garnish as desired.
