  • 1 tablespoon olive oil or 1/4 cup water
  • 1 large white onion, sliced
  • 6 cloves garlic, minced
  • 2 1/2 lbs. fresh tomatoes (roma, plum, or vine-ripened)
  • 1/2 cup basil leaves (fresh or dried)
  • 1/2 teaspoon dried oregano
  • 2 cups low-sodium vegetable broth
  • Salt and pepper to taste
  • Vegan cream for serving

Instructions

  1. Prepare ingredients by slicing the onion and mincing the garlic. Quarter or chop tomatoes.
  2. In a large heavy-bottom pot, heat olive oil (or water) over medium heat. Sauté onion until translucent (about 7 minutes), then add garlic and cook for another minute.
  3. Stir in tomatoes, basil leaves (or dried), oregano, salt, pepper, and vegetable broth.
  4. Bring to a boil, cover, reduce heat to low, and simmer for 15 minutes.
  5. Allow the soup to cool slightly before blending until smooth using an immersion blender or countertop blender.
  6. Adjust seasoning if needed and stir in vegan cream before serving.
