  • 500g chicken breast, cubed
  • 200g mushrooms, sliced
  • 300g fresh asparagus
  • 1 red bell pepper, sliced
  • 3 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tsp cornstarch mixed with 2 tbsp water
  • 1 tbsp sesame oil or vegetable oil
  • Salt & black pepper to taste
  • Chopped green onions for garnish
  • 200g jasmine or long-grain rice
  • 400ml water
  • Pinch of salt
  • 1 tbsp olive oil

Instructions

  1. 1. Cook the rice: Boil 400ml water in a pot. Add 200g jasmine rice and a pinch of salt. Reduce heat to low, cover, and simmer for about 15 minutes. Fluff with a fork.
  2. 2. Prepare the asparagus: In a separate pan, heat 1 tbsp olive oil over medium heat. Add asparagus seasoned with salt and pepper; roast for 8-10 minutes until tender-crisp.
  3. 3. Sauté garlic and chicken: In a wok, heat 1 tbsp sesame oil over medium-high heat. Sauté minced garlic until fragrant (30 seconds), then add cubed chicken and cook until golden brown.
  4. 4. Add vegetables and sauces: Stir in sliced mushrooms and red bell pepper; cook for a few minutes. Pour in soy sauce, oyster sauce, hoisin sauce, and cornstarch slurry; stir well.
  5. 5. Serve hot: Continue cooking until the sauce thickens and coats all ingredients well. Serve alongside fluffy rice and roasted asparagus.
