  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your muffin tin with liners or grease lightly.
  2. In a mixing bowl, combine pumpkin puree, maple syrup (or honey), Greek yogurt, vegetable oil, egg, and vanilla essence. Whisk until smooth.
  3. In another bowl, mix whole wheat flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
  4. Gradually add the dry mixture to the wet mixture while stirring gently until just combined.
  5. Pour the batter into muffin cups, filling each about two-thirds full.
  6. Bake for about 18 minutes or until a toothpick inserted comes out clean.
