  • 200g lean ground beef or turkey
  • 1 medium sweet potato, diced
  • 1 ripe avocado, sliced
  • 2 hard-boiled eggs, halved
  • 1 tbsp olive oil
  • 1 tbsp tomato paste
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 400F (200C). Toss diced sweet potatoes in olive oil, salt, and pepper; spread on a baking sheet and roast for 20-25 minutes until golden.
  2. In a non-stick skillet over medium heat, add olive oil and ground meat. Cook until browned; stir in tomato paste, cumin, smoked paprika, salt, and pepper. Simmer for 2-3 minutes.
  3. In a mixing bowl or serving dish, layer cooked meat, roasted sweet potatoes, sliced avocado, and halved hard-boiled eggs. Garnish with fresh herbs if desired.
