  • 1 medium sweet potato
  • 1 cup broccoli florets
  • 1 tsp soy sauce
  • 1 tsp honey or maple syrup
  • 1 tsp sesame oil
  • 1 tsp olive oil
  • 1 tsp paprika
  • 1 tsp rice vinegar (optional)
  • 1 tsp black sesame seeds
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss sweet potato wedges with olive oil, paprika, salt, and pepper. Spread on a baking tray and roast for 25-30 minutes, flipping halfway.
  3. In a mixing bowl, combine soy sauce, honey (or maple syrup), sesame oil, and vinegar. Brush the mixture over the salmon fillet placed on parchment paper. Sprinkle with black sesame seeds and bake for 12-15 minutes.
  4. Steam broccoli florets for about 4-5 minutes until tender and bright green.
  5. Plate the salmon alongside the sweet potato wedges and steamed broccoli. Drizzle leftover glaze over the salmon if desired.
