  • 1 cup uncooked white rice
  • 2 cups water or chicken broth
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can black beans (15 oz), drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup salsa
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine water or chicken broth with uncooked rice. Bring to a boil, reduce heat to low, cover, and simmer for about 15-20 minutes until the rice is tender.
  2. While the rice cooks, heat olive oil in a skillet over medium heat. Add ground beef or turkey; cook until browned and fully cooked through. Drain excess fat if necessary.
  3. Stir in the taco seasoning as per package instructions.
  4. Mix in drained black beans and corn; cook for an additional 5 minutes until heated through.
  5. Fluff the cooked rice with a fork, then divide it into serving bowls. Top each bowl with the meat mixture, followed by diced tomatoes, shredded lettuce, cheddar cheese, salsa, and any other desired toppings.
